Awesome Energy Bars

Last weekend I participated in the Relay for Life and I knew I'd need some snacks to help keep me going through the night...
Luckily, Memphis had recently gotten a chickaDEE magazine in the mail with the perfect recipe!
{it was an Olympics inspired issue with lots of tips on keeping healthy & staying strong... just what I needed!!}
What You'll Need:

1 1/2 cups instant oatmeal
1/2 cup of flour
1/2 shredded coconut
1/2 dried fruit
{I used cranberries & golden raisins}
1/3 brown sugar
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 cup melted butter
1/2 unsweetened applesauce
1 egg

 1. Preheat oven to 350. Stir the oast, flour, coconut, fruit, sugar, cinnamon and baking soda in a large bowl.
2. In a separate bowl, mix the melted butter, applesauce and egg.
3. Gently stir the applesauce mixture into the rest of the ingredients.
 4. Spoon the mixture into a lightly greased 9"x9" baking pan.  Bake for 25 to 30 minutes until lightly browned.  Cool before cutting into pieces.

I really enjoyed these and will definitely be making them again!
{and check me out getting all domestic... this is what? my second or third recipe post in the past month or so?! ha!}

  10. Thanks for posting this recipe. My daughter has mislaid her magazine and I crossed my fingers that someone thought to blog this recipe. We've made it several times and my girls eat it for dessert, breakfast and as a school snack so it never last more than 12 hours in our house!
